Corn Pepper And Mushroom Casserole |

This is a very nice casserole that is not only tasty but very impressive. I got this from a coworker who has brought this to our office potlucks several times. Everyone love it. Ingredients:
1/4 cup chopped green pepper |
1/4 cup chopped celery |
1/4 cup chopped onion |
3 tablespoon bacon drippings |
15 ounce can whole kernel corn drained |
1/4 cup pimiento chopped |
1/2 cup chopped mushrooms |
2 tablespoons cornstarch |
1/3 cup water |
1 pound cooked shrimp peeled |
salt and black pepper to taste |
1/2 cup sharp cheddar cheese grated |
Directions:
1. Sauté pepper, celery and onion in bacon drippings then add corn, pimiento and mushrooms. 2. Mix cornstarch and water until smooth then add to mixture in pan. 3. Stir constantly over medium heat to thicken then add cooked shrimp, salt and pepper to taste. 4. Pour into a greased casserole dish then sprinkle cheese on top. 5. Bake at 400 for 30 minutes. |
