These are like little corn pancakes, my family loves em. Ingredients:
1 can cream style corn |
approx handful of flour |
1 egg |
salt n pepper to taste |
Directions:
1. In bowl mix corn, flour(use enough so it looks like a really thick pancake batter). Add egg,salt n pepper. 2. Heat a skillet, a cast iron griddle is great with these. Add oil n get hot as if you were making pancakes. 3. Drop 1/4 c or so of batter in skillet, making little cakes. When top is set n bubbly flip over n brown other side. Place in warm oven n continue frying patties till all batter used up. 4. Can be served with maple syrup or with a pat of butter. I eat mine plain. |
