Nice little summer side dish. I like with salsa, but whatever condiment you like to use would be good. Ingredients:
1 (11 1/2 ounce) can corn, drained |
1 medium onion, chopped |
1 teaspoon curry powder |
2 cloves garlic, crushed or pressed |
1 teaspoon ground coriander |
2 chopped scallions |
3 tablespoons all-purpose flour |
1/2 teaspoon baking powder |
salt |
1 large egg |
4 tablespoons oil |
Directions:
1. In a medium mixing bowl, mash the corn lightly. 2. Add each of the remaining ingredients except for the oil, one at a time, mixing each one thoroughly with the batter. 3. Heat oil over medium-high heat. 4. Drop patties by spoonful into skillet. 5. Allow to cook 5-10 minutes, turning once, or until golden brown on each side. 6. (Do not turn over too early, or they will fall apart). 7. Serve witha little salsa. |
