Corn lovers.....these are tasty little somethings, called corn oysters......similar to corn fritters. Delicious little nibbles. Ingredients:
1 cup whole kernel corn |
2 eggs, well beaten |
1 cup all purpose flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
vegetable oil or crisco |
Directions:
1. In large bowl, combine corn, eggs, flour, baking powder and salt 2. Mix well 3. Drop by teaspoonsfuls into 1/4 inch hot oil in skillet 4. Fry until golden brown 5. Makes about 1 dozen |
