Corn over Rice (Chowder?) |

Stupidly simple, and apparently, delicious. I threw a few things into the crockpot one morning, intending to add to it after I ran some errands. My husband loved it how it was, and requested that I make it often. Go figure. Ingredients:
3 lbs frozen corn |
1/2 cup margarine |
2 (12 ounce) cans evaporated milk |
salt and pepper |
3 cups cooked rice (optional) |
Directions:
1. Dump everything but the rice into a crockpot. Turn on high for 2-3 hours, stirring occasionally. - OR - cook on low for 4-5 hours. 2. Turn down to warm until ready to serve. Serve over warm rice. |
