Corn Okra And Tomatoes

This is my version of an old southern favorite!
Ingredients:
6 ears of fresh corn
2 lbs okra
2 cans tomatoes
1 onion chopped
cayenne pepper
salt & pepper
butter (if vegan use margarine)
Directions:
1. Chop okra
2. shuck corn and cut corn of stalks
3. In a large skillet melt butter or margarine on medium high heat
4. add chopped onions saute until translucent
5. add the okra and corn and saute for about 10 minutes
6. add the tomatoes
7. turn the burner down to simmer
8. add the cayenne pepper (use as much or little depending on taste), salt and black pepper.
9. Let simmer for about an hour or until the vegetables are tender.
10. Serve immediately.
