Super tasty fast cheap appetizer, good for a fish fry in place of hush puppies. But fun to make anytime you want a little fried nibble, almost a corn croquette, the honey drizzle makes it extra yummy. Ingredients:
2 cups of flour |
1/4 cup of corn meal |
3/4 to 7/8 cup of milk, depends on the humidity |
3 teaspoons of baking powder |
1 teaspoon of salt |
1/2 teaspoon of pepper |
2 eggs, slightly beaten |
1 -12 oz. can of whole kernal corn, drained |
1 - 8 1/2 oz of cream style corn |
2/3 cup of bacon, fried and crumbled |
honey |
powdered sugar |
Directions:
1. Sift dry ingredients. 2. Combine egg, milk, corn and bacon. 3. Add to dry ingredients. 4. Mix until well moistened. 5. Drop by teaspoonsful into hot oil (370) 6. Fry until golden brown. 7. Drizzle with honey and dust with powdered sugar if desired. |
