I was surprised to see Corn Ice Cream in Mexico, but it is actually delicious Ingredients:
3 ears fresh sweet corn |
1 cup sugar |
1 cup light cream |
1 teaspoon vanilla |
1 pint heavy cream |
Directions:
1. Peel and clean the corn. Simmer until kernels are tender. Allow to cool, and cut kernels from the cob. Place in a blender with the sugar and light cream and blend until pureed. Place in ice cream maker with the other ingredients. Churn according to manufacturer's instructions. |
