simple fritters that we usually eat with pinto beans,, or fried chicken. I also like them with a bowl of chili Ingredients:
2 cups flour |
2 tsp baking powder |
1 tsp salt |
1 egg |
1/2 cup milk |
2 cups canned cream style corn |
1 10 oz package frozen corn- thawed |
several grindings of fresh pepper to taste |
vegetable oil for frying |
Directions:
1. In medium bowl, sift together flour, baking powder, and salt. 2. Add remainig ingredients except oil. Mix well 3. Add cooking oil to deep skillet about 1 in depth and heat until a drop of water sprinkled in it sizzles. 4. Drop tablespoonfuls of the batter into hot oil. 5. Fry 2 to 3 minutes or until golden brown,, may need to carefull turn midway thru cooking 6. Fry no more than 4 to 6 at a time. 7. remove with slotted spoon and drain. 8. enjoy |
