Easy corn cake. You can make them sweet and serve with honey butter or leave out the sugar and serve them with chili or soup! Ingredients:
1 can creamed corn |
1 cup all purpose flour |
1 egg, slightly beaten |
1 tsp baking powder |
1/2 tsp salt |
1/4 cup water |
1/4 cup evaporated milk |
2 teaspoons granulated sugar (optional) |
Directions:
1. Mix all ingredients in mixing bowl. 2. Heat about 1 of oil in pan. when hot drop spoonfuls of batter into oil. 3. Fry about 2 to 4 minutes on each side, until cooked through and browned. 4. Drain on paper towels. Serve hot. 5. Note: if not serving right away, you can place them on a baking sheet and put them in a 350 degree oven and bake them until slightly crisp, when ready to serve. Do not over cook! |
