Ingredients:
1 cup fresh corn or frozen kernels |
2 eggs, beaten |
1/4 cup plus 1 tablespoon all purpose flour |
2 tablespoons coarse yellow cornmeal |
1/2 teaspoon baking powder |
1 teaspoon sugar |
1/2 teaspoon salt |
pinch cayenne pepper |
pinch grated nutmeg |
bacon drippings, for frying, or shortening |
Directions:
1. In a large bowl, combine all the ingredients. Add enough bacon drippings or shortening to a cast iron skillet to make 1/4-inch fat. Drop mixture by the tablespoon into hot skillet and cook 1 minute on each side or until golden brown. |
