From Mom's recipe box. Ingredients:
2 1/2 cups corn kernels |
2 eggs, beaten |
1 1/4 cups flour |
1 teaspoon baking powder |
1 1/2 teaspoons table salt |
peanut oil, for frying |
Directions:
1. Stir corn into eggs. Sift together dry ingredients and stir into wet ingredients. 2. Heat peanut oil, 3 deep in pot, to 375°F Drop mixture by tablespoons into oil. Fry 5-8 minutes until golden brown, turning over once. |
