Love the muffin and really like the orange zest in this recipe.
Ingredients:
1 cup of all purpose flour
2 tsp of baking powder
1/2 tsp of baking soda
1/2 tsp of salt
1 cup of buttermilk
1/4 cup of vegetable oil
1 egg
1 cup of raisins
1/2 cup firmly packed brown sugar
1 1/2 tsp of grated orange rind
4 cups of corn flakes, coarsely crushed to 2 cups
Directions:
1. Stir together flour, baking powder, baking soda and salt; set aside.
2. Beat buttermilk or soured milk, oil and egg with a fork in a medium bowl.
3. Stir in raisins, brown sugar, and orange rind.
4. Blend in corn flake crumbs.
5. Add flour mixture and stir until just blended.
6. Spoon into greased muffin tins, filling about 2/3 full.
7. Bake at 425 degree for 12 to 15 minutes until lightly brown.
8. Makes 18 muffins.
