This recipe originated on the back of a Kellogg's Corn Flakes box years ago. A good way to use up any extra cornflakes you have hanging around. I just made these yesterday and got 45 cookies. Ingredients:
4 egg whites |
1/4 teaspoon cream of tartar |
1 teaspoon vanilla |
1 -1 1/3 cup sugar (i found these too sweet so i use 1 cup sugar) |
1 cup chopped pecans (i've used walnuts) |
1 cup flaked coconut |
3 cups corn flakes |
Directions:
1. Preheat oven to 325°F. 2. In large mixing bowl beat egg whites until foamy. 3. Stir in cream of tartar and vanilla. 4. Gradually add sugar beating until stiff and glossy. 5. Fold in pecans, coconut and cornflakes. 6. Drop by rounded measuring tablespoon onto well greased or parchment lined baking sheets. 7. Bake for about 20 minutes or until lightly browned. 8. Remove immediately and place on wire rack to cool. |
