Cornbread in rare form! Baking with sweet corn never became so much fun and yummy! Ingredients:
1 box of jiffy cornbread mix |
1 can of whole kernel corn (drained) |
1 can of creamed corn |
1 stick of butter |
4 tbsp light corn syrup or honey |
3 ounces of sour cream |
2 eggs |
Directions:
1. Melt butter and beat eggs separately. 2. Dump Jiffy mix (Sift your jiffy mix for fluffier results) into a large mixing bowl and add drained whole kernel corn and creamed com. 3. Add melted butter to beaten eggs, corn syrup/*ancehoney and add sour cream last. (Do not add HOT melted butter to your mix. Allow a few minutes for cooling then add the sour cream. Otherwise, it will precook the batter) 4. Mix all ingredients together well. (Do not over beat your 5. batter while mixing. Over beaten batter will result in a mushy bake) 6. Bake for 45 minutes until golden brown. 7. Allow 20 minutes to cool and set, then serve. |
