Great corn chowder with lots of veggies Ingredients:
1 1/2 tbs. oil |
2 onions chopped |
1 stalk celery chopped |
1 red bell pepper seeded and diced |
3 cloves garlic minced |
3 1/2 cups vegtable stock |
1 teapoon thyme |
1 bay leaf |
2 cups frozen corn kernels |
1 potatoe peeled and diced |
2 tbs, corn starch |
12 oz. evaporated skimmed milk |
salt and pepper to taste |
1 large covered pot |
Directions:
1. Heat oil over low heat 2. Add onions and cook 5 minutes or untill translucent 3. Add celery red pepper Garllic and cumin stir 2-3 minutes 4. Add stock Thyme nd Bay Leaf bring to boil 5. Reduce to a simmer and cook 10 minutes 6. Add Corn and Potatoe continue to simmer 5-10 minutes 7. or untill veggies are tender 8. Combined cornstarch and Milk 9. Blend into soup 10. Season with salt and pepper |
