This is the creamiest, cheesiest corn chowder. Ingredients:
1/2 onion, chopped |
5 medium potatoes, chopped |
salt & pepper to taste |
1/2 stick butter |
1/2 lb. velveeta cheese, chopped |
2 cans creamed corn |
1 pint half-and-half (or whole milk) |
5-7 strips bacon, crumbled |
Directions:
1. Simmer onion and potatoes in just enough water to cover them, until softened (not completely mushy). Do not drain. Add salt and pepper to taste. Add butter, Velveeta, corn, half-and-half*; stir. Crumble bacon on top. Cook over low heat one hour, stirring occasionally. 2. *You could add chicken leftovers to this and then it's Chicken Corn Chowder. |
