I've come across many variations on this classic side dish - most I've disliked quite a lot. Not this one though - this one is a keeper for me. Ingredients:
3 eggs |
1 stick butter, melted |
1 box jiffy cornbread mix |
1/4 cup grated onion |
4 oz whipped cream cheese |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 can creamed corn |
1 can kernel corn (drained) |
1 cup cheddar cheese |
Directions:
1. In a bowl, beat the eggs, melted butter, cornbread mix, grated onion, whipped cream cheese, salt and pepper until combined. 2. Stir in the corn and cheddar cheese. 3. Pour into a greased 11x7 baking dish. 4. Bake uncovered in a 350 oven for 45-55 minutes, until the edges are browned and pull away from the sides of the dish. |
