A Southern must have during Thanksgiving! Ingredients:
1 box corn muffin mix |
2 eggs |
1 can whole kernel corn drained, 1 can cream corn |
1 red pepper, 1 green pepper, 1 yellow onion all diced |
1 stick butter(not margarine!!!) |
8 oz sour cream, 2 t milk |
shredded cheddar cheese |
cayenne pepper |
cast iron skillet |
Directions:
1. Preheat oven to 350 2. Cast Iron skillet med. heat melt butter & saute onion pepper mix until onions are clear about 10min. 3. In seperate bowl combine muffin mix, eggs, both cans of corn 4. Remove skillet from heat, stir in corn mixture 5. Mix milk and sour cream, then frost the top of the corn mixture as best you can 6. Top cheddar cheese then cayenne 7. Cook for 45 to 55 min or until cheese is dark and bubbly. 8. Enjoy! |
