Skillet Corn bread made with sour cream and buttermilk Ingredients:
1 cup yellow cornmeal |
1 cup flour |
1 tbsp baking powder |
1/4 tsp baking soda |
3/4 cup buttermilk |
1/2 cup sour cream |
1 egg |
3 tbsp sugar |
4 tbsp margarine |
Directions:
1. Preheat oven to 375. 2. Combine cormeal, flour, and baking powder in a large bowl. 3. Combine sour cream and buttermilk in small bowl. Add baking soda. 4. Whisk egg, sugar and 3 Tbsp melted margarine. Add buttermilk mixture. 5. Melt 1 Tbsp margarine in iron skillet in the 375 degree oven. 6. Add all wet ingredients to dry ingredients and quickly stir together with as few strokes as possible. Scrape batter into iron skillet. 7. Immediately place skillet in oven to bake 20-25 min until barely golden brown. |
