This dish goes with any meat maybe not seafood but it will be an excellent side dish and easy to make. Ingredients:
1 pan of corn bread (12 round skillet) |
6-7 slices of bacon cooked crisp and crumbled |
1/2 onion diced |
1c shredded cheddar cheese |
4-5 dill pickles diced |
1/2 can of black-eyed peas |
2 cobs of corn, corn removed from cobb(i don't cook the corn) |
1c of mayonaise |
1/4 c pickle juice |
Directions:
1. Bake corn bread or I buy at local market and let cool 2. Fry bacon,while bacon is frying start chopping ingred. 3. Chop onions and pickles 4. Cut corn of cob 5. Drain and rinse black-eyed peas 6. Let bacon cool,then crumble 7. crumble corn bread into a VERY LARGE bowl 8. add all ingredients mix well. Stir in Mayo and Pickle juice 9. Cover and chill until ready to serve.....taste even better the next day |
