A holiday and potluck favorite, this corn casserole is a family tradition. Ingredients:
1 box corn bread mix |
1/3 cup margarine, melted |
2 eggs, beaten |
1 can corn, sweet |
1 can creamed corn |
1 cup light sour cream |
1/2 cup cheddar cheese, shredded |
Directions:
1. Preheat oven to 350 degrees. 2. In a large mixing bowl, combine all ingredients except the cheese. Mix well. 3. Grease a 9x13 baking pan. 4. Add cornbread mixture to pans and bake for 40 minutes or until a toothpick inserted into the center of the pan comes out clean. 5. If desired, sprinkle shredded cheddar on top of corn bread casserole during last 10 minutes of cooking. |
