These are perfect to serve with chilis or stews. Ingredients:
2/3 cup all-purpose flour |
1/2 cup yellow cornmeal |
1 tbsp sugar |
1 1/2 tsp baking powder |
1/4 tsp salt |
1/2 cup sharp cheddar, grated |
1/2 cup sour-cream |
1/4 cup green onions, thinly sliced |
1 can (8 3/4 oz.) cream style corn |
dash of hot sauce |
1 lrg. egg, lightly beaten |
cooking spray |
Directions:
1. Preheat oven to 375 2. Combine flour and next 4 ingredients (through salt) in a large bowl 3. Combine cheese and remaining ingredients in a smaller bowl 4. Stir with whisk, add to flour mixture; stir until just moistened 5. Coat muffing cups with cooking spray 6. Divide batter evenly among muffin cups 7. Bake for 10 minutes or until golden brown 8. Cool on wire racks |
