Ingredients:
2 cup(s) cornmeal
1/2 cup(s) all-purpose flour
2 teaspoon(s) baking powder
1 teaspoon(s) baking soda
1 teaspoon(s) salt
1 teaspoon(s) sugar
2 eggs lightly beaten
2 cup(s) buttermilk
2 tablespoon(s) butter
Directions:
1. Heat oven to 425 with cast-iron skillet in the oven.
2. Combine all dry ingredients.
3. Stir together eggs and buttermilk.
4. When oven is ready, remove skillet and put butter in. Place skillet back in oven for 4 minutes.
5. While butter heats, combine wet and dry ingredients in a bowl, stirring until just moist.
6. Remove skillet from oven and pour butter into batter, briefly stirring.
7. Pour batter into skillet and bake at 425 for 25 minutes or until golden. Serve immediately.
