This recipe has fiber, calcium, iron and a good amount of protein. It also has a a bit of fat but not too much per serving because the recipe doesn't call for butter which usually gives bread it's fat. The flour and corn meal provide a significant amount of carbohydates. Corn bread makes for a healthy appetizer for a meal. Ingredients:
2 cup all-purpose flour |
2 cup cornmeal |
1/2 cup sugar |
8 teaspoons baking powder |
1 1/2 teaspoon salt |
2 cup milk |
4 eggs |
1/2 cup shortening |
Directions:
1. In a mixing bowl, combine flour, cornmeal, sugar, baking powder and salt. 2. Add the milk, eggs and shortening; beat for 1 minute. 3. Pour into a greased baking pan bake at 425 degrees F for 20-25 minutes or until bread is golden brown. |
