Corn, Black Bean, And Avocado Salad |

This is a recipe from my friend Emily that I've just fiddled with a bit. It's uber easy, cheap, fresh, delicious, and healthy. Ingredients:
2lb frozen organic corn kernels, thawed in cold water |
15 oz. can organic black beans, drained and rinsed |
1/2 large red onion, diced |
1 large red pepper, diced |
1 large green pepper, diced |
1 medium bunch cilantro, chopped |
2 avocado, skinned and chopped |
3 roma tomatoes, diced |
3 tb. olive oil |
Directions:
1. Wash and dice all above ingredients as indicated. 2. Toss all ingredients together in a large bowl. 3. Chill if desired before serving. 4. That's it! |
