Corn,avocado And Tomato Salad |

It is soooooo good. Fresh and summery tasting. Three of us pretty much polished off the bowl as part of dinner this evening. Great recipe. I had a couple of cobs of corn left over from the other evening that I had steamed in the microwave. Read more . I just cut all the kernels off and used that and it tasted so fresh and sweet. Ingredients:
2 cups cooked corn |
1 avocado, cut into cubes |
1 pint cherry tomatoes, halved |
1/2 cup finely diced red onion |
dressing |
2 tbsp. olive oil |
1/2 tsp. grated lime zest |
1 tbsp. fresh lime juice |
1/4 cup chopped cilantro |
1/4 tsp. salt |
1/4 tsp. freshly ground pepper |
Directions:
1. Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in a measuring cup, pour over the salad and gently toss to mix. 2. Enjoy! |
