CORN APPLE HOTCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Johnson Estate in Rockwall, Texas in 1991. Ingredients:
1-1/3 cup yellow cornmeal |
2-2/3 cups flour |
1/2 cup granulated sugar |
2 teaspoons baking powder |
4 teaspoons baking soda |
1/4 teaspoon allspice |
4 large apples grated |
6 eggs |
8 tablespoons butter melted |
3 cups buttermilk |
Directions:
1. Sift together dry ingredients then add grated apples. 2. Whisk together eggs, butter and buttermilk then add to dry ingredients and mix well. 3. Allow better to rest 20 minutes then pour batter 1/3 cup at a time on lightly oiled hot griddle. 4. Cook until edges dry and small bubbles form on surface then flip and cook until golden. |
