From Cooking Light. Per 3/4 c. serving: 240 calories, 7.2 g fat, 7.2 g protein, 39.7 g carb, 4 g fiber, 19 g cholesterol. Ingredients:
3 cups fresh corn kernels |
2 1/2 lbs red potatoes, quartered |
3/4 cup 2% low-fat milk |
1/2 cup shredded smoked mozzarella cheese |
3 tablespoons butter, softened |
1/4 cup chopped fresh cilantro |
1 tablespoon fresh lime juice |
3/4 teaspoon salt |
1/2 teaspoon fresh ground pepper |
Directions:
1. Heat a large nonstick skillet coated with cooking spray over medium-high heat. 2. Add in the corn; stir/saute 5 minutes or until lightly browned; cool. 3. Place potatoes in a saucepan; add water to cover. 4. Bring to a boil; lower heat, simmer 15 minutes or until tender. 5. Drain and return potatoes to pan. 6. Add milk, cheese, and butter; mash to desired consistency. 7. Cook 2 minutes, stirring constantly. 8. Stir in corn, cilantro, and remaining ingredients. |
