This is the only recipe I know for using up canned okra. Well, the only one that isn't gross. Ingredients:
1 (14 1/2 ounce) can okra, drained |
1 (8 ounce) can whole kernel corn, drained |
2 cups vegetable broth |
1/2 cup tofu, diced |
1 stalk celery, thinly sliced |
1 small onion, diced |
1 cup milk |
Directions:
1. Combine okra, corn, broth, tofu, celery and onion in large saucepan. Cover and cook over medium heat 10 minutes until heated through. Add milk, salt and pepper to taste. Reduce heat to low. Cover and simmer 5 to 10 minutes until soup is heated through, stirring occasionally. Do not boil, or milk may separate. |
