Easy and delicious salad for a picnic,buffet or anytime at all. Ingredients:
2 tsp. toasred sesame oil |
1 tb rice vinegar |
2 tsp soy sauce or tamari |
2 c frozen,shelled edamame |
1 c fresh corn(1-2 ears) or partially thawed, frozen corn |
2 tb toasted sesame seeds |
generous pinch of salt |
Directions:
1. Bring pot of wateer to boil. Meanwhile,whisk all dressing ingredients in a med. bowl. Boi edamame 3 mins,add vorn,boil 2 mins. more. Drain into collander,run under cold water till cool enough to touch. Add edamame and corn to dressing and toss to combine. Add sesame seeds and toss again. Add salt to taste. Cover and chill at least 15 mins. 2. This is pretty served in raddichio bowl(pull leaves off and serve in base.) |
