This is my own combination of several recipes to arrive at something that made me happy. Ingredients:
1 whole sweet onion |
olive oil |
vegetable stock |
2-4 cans crabmeat |
2 cans cream corn |
1-2 cans whole corn (roasted corn adds another level) |
half and half |
spices |
white pepper |
black pepper |
kosher salt |
old bay |
cajun spice |
cayenne |
Directions:
1. Sweat the onions in olive oil until soft. 2. Add stock, crab, corn. 3. Spice to your taste, I use: 4. 1/2 t white pepper 5. 1-2 t salt 6. 1-3T old bay 7. 1/4-1/2 cayenne. 8. Cook 30-15 minutes, thicken with a roux and add the half and half (or cream) at the end. 9. Goes great with those knock off Red Lobster biscuits |
