This is a recipe my mom found from a government posting.. (before the internet).. it's simple, and lends itself well to your own variations. Ingredients:
8 oz clams (i usually double or triple this... i am just that way..hehe) i like the chopped clams but can use minced or whole |
3 cups milk (or half/half or cream) |
1 cup water/clam liquid |
3 slices bacon (or pancetta.) |
1 cup onions - chopped |
2 cups diced raw potatoes |
1-1/2 cup drained whole kernel corn |
2 (or more) tbspns flour |
1 tbspn butter |
1 tspn celery salt |
dash (or more) white pepper |
always optional - 3 cloves crushed minced garlic and some green onions |
Directions:
1. Drain clams ... save liquid, add water to liquid -> 1 cup 2. Fry bacon (pancetta) till crisp, then add onions, cook till tender (I usually add the garlic here) 3. Add potatoes, water/clam liquid, cover and simmer till potatoes are tender. 4. Add corn and milk. 5. Blend flour with butter (if you want a thicker chowder, add more flour) stir into pan. 6. Cook slowly until mixture thickens slightly... stirring constantly. 7. Add seasonings and clams (here's where I add the thin sliced green onions). 8. Simmer for 5 minutes. 9. Ready to serve... but taste even better the next day. 10. I also like to add a few splashes of Franks extra hot sauce... |
