I grew up eating this and my family still enjoys it. Its's so easy to put together and stick in the oven with a meatloaf and scalloped potatoes. Ingredients:
1 can corn, drained (or use an equal amount of frozen) |
1/2 cup milk |
2 eggs |
6 saltine crackers, crushed |
appproximately 1 1/2 cups grated cheddar cheese |
Directions:
1. Put corn in a greased casserole dish. In separate dish, mix the milk, eggs, saltines and cheese. Stir in with the corn. Mix well. Bake at 350 degrees for about 45 minutes. It will puff up and get a lovely golden brown crust on the top. |
