Ingredients:
1 cup(s) black beans |
1 teaspoon(s) dark chili powder |
2 tablespoon(s) fresh chopped cilantro |
1 tablespoon(s) fresh chopped garlic |
1 cup(s) fresh corn |
1/2 teaspoon(s) ground cumin |
1 jalapeno diced |
1/4 cup(s) olive oil |
1/2 cup(s) red, green, yellow pepper |
salt and pepper |
1 small diced red onion |
Directions:
1. drizzle corn with 1/2 olive oil and roast in 400 degree oven until corn begins to brown; remove and cool; combine all remaining ingredientswith chilled corn; salt and pepper to taste 2. (cooked onion, garlic and peppers first) |
