Corn And Black Bean Salad |

Flavors of lime,cumin,garlic and cilantro marinate tomatoes,black beans and corn for a festive salad. Ingredients:
1/2 bag (16 oz) sweet corn |
2 cans(14.5 oz. ea) fire- roasted diced tomatoes |
1/2 c black beans from 15 oz. can,drained and rinsed |
1/4 c chopped red onion |
1/2 tsp coarse salt |
3 tbs chopped fresh cilantro |
2 tbs fresh lime juice |
1 tbs vegetable oil |
1/2 tsp ground cumin |
1/4 tsp pepper |
1 clove garlic,finely chopped |
1 avocado,pitted,peeled and chopped |
Directions:
1. Cook corn as directed on pkg. rinse with cold water;drain 2. In large bowl, stir together corn and remaining ingredients except avocado. refrigerate until ready to serve,at least 1 hour. Stir in avocado just before serving. 3. Special touch:Spoon salad into bibb lettuce leaves and garnish with fresh cilantro |
