Corn, black beans, tomatoes, and cilantro seasoned with canola oil and a burst of red onion. Ingredients:
12 oz corn |
4 oz black beans |
1 tomato |
1/2 cup cilantro |
1 tbsp canola oil |
1/2 red onion |
Directions:
1. Chop tomato, cilantro, and red onion. 2. Mix frozen corn, black beans, and chopped ingredients in large bowl. 3. Drizzle with canola oil and salt/pepper to taste. 4. Refrigerate for 12-24 hours. 5. Toss with lime juice and serve. 6. * For a non-vegetarian version of this dish, add 1 cup baked, chopped chicken. |
