Tried and true. These are fantastic, we love them. They are good as a side dish or an appetizer. Waning, they are addicting. This recipe came from an estate sale. I obtained it when I purchased the family collection from the Glib Estate in Mesquite, Texas in 1982. Ingredients:
1 cup sifted flour |
1 teaspoon baking powder |
1 teaspoon salt |
2 eggs well beaten |
1/2 cup milk |
1 tablespoon cooking oil |
6 slices cooked bacon crumbled |
2 cups whole kernel corn drained |
Directions:
1. Mix all ingredients in order listed. 2. Drop 1 tablespoon fritter batter into deep hot fat and cook until golden brown. 3. Shake off extra fat then drain on absorbent paper. |
