Coriander and Cumin Broiled Eggplant |

This recipe can be prepared in 45 minutes or less. Ingredients:
1/2 large eggplant |
1/4 cup packed fresh cilantro sprigs |
2 tablespoons extra-virgin olive oil |
1 tablespoon fresh lemon juice |
1 teaspoon ground cumin |
1/2 teaspoon ground coriander seeds |
a pinch cinnamon |
Directions:
1. Preheat broiler and lightly oil a baking pan. 2. Cut eggplant into 1/4-inch-thick slices. Chop cilantro and in a bowl stir together with remaining ingredients and salt and pepper to taste. Brush cilantro mixture on both sides of eggplant slices and transfer to baking pan. Broil eggplant 5 to 6 inches from heat until golden and cooked through, about 10 minutes. |
