Copycat Red Lobsters Dungeness Crab Bisque |

this is one of my favorite soups to eat on a cold day. Ingredients:
1 tbsp. minced onion |
2 tbsp. butter |
2 tbsp. flour |
2 cups chicken broth |
2 cups half and half |
1 lb. alaskan dungeness crab |
salt and pepper, to taste |
chopped parsley |
--i like to add 1 tbsp. finely chopped celery and saute it with the |
onion. |
Directions:
1. Saute the onion in butter. 2. Add flour; stir with a whisk for a minute. 3. Gradually stir in the chicken broth and half and half; keep stirring with the whisk and cook for 5 minutes over Medium heat. 4. Break crab into chunks; add to broth, 5. Salt and pepper to taste. 6. Heat thoroughly. 7. Garnish with parsley. |
