(Copy) Ihop Super Spinach Salad

Not being a big fan of pancakes, I ordered this salad at IHOP when I attended a family breakfast there. Not like any other spinach salad I have had, it is very loud and flavorful. It is important that you use the dressing called for, as others have not complimented the salad. This is hearty enough for a dinner salad, and so good there are never leftovers.
Ingredients:
1 (10 ounce) bag baby spinach
4 ounces blue cheese
6 slices of thick-sliced bacon
1 boneless chicken breast, pounded to 1/2 inch
1/2 small red onion, sliced in thin rings and separated
2 1/2 ounces texas toast brand caesar-flavor croutons
1/4 cup honey mustard dressing or 1/4 cup vidalia creamy onion dressing
Directions:
1. Fry the bacon to chewy-cooked, then cut into chunks.
2. Drain pan of all but 1 tablespoon of drippings, leaving bits in pan.
3. Pan-fry the chicken in drippings, 4 minutes on each side. Slice.
4. Let chicken cool to room temperature while you assemble the other items.
5. In large bowl, toss the spinach, bleu cheese (to taste), bacon, and onion.
6. Add dressing, lightly tossing and coating the salad.
7. Divide between two dinner plates.
8. Top with chicken (1/2 breast each), then croutons.
9. note: Feta cheese may be substituted for the bleu, but it changes the character of the salad.
