This is a family favorite any time of the year. Keeps well in the frig. once made but usually doesn't stay long. I should say also a Southern favorite at church gatherings. Double or Triple the recipe and serve at Homecomings! Read more ! Ingredients:
2 lb carrots |
1 scant c. sugar |
1/2 c. oil |
1/2 c. vinegar |
1 can tomato soup |
1 small onion |
1 small bell pepper |
1 tsp worchestershire |
1 tsp. salt |
1 tsp. mustard, dry |
1 tsp pepper |
Directions:
1. Slice carrots thin, boil until just tender, drain. Dice onion and bell pepper. Mix other ingredients in a bowl and then add the carrotts, bell pepper, and onions. Let stand several hours. Overnight if possible! |
