This is a family favorite any time of the year. Keeps well in the frig. once made but usually doesn't stay long. I should say also a Southern favorite at church gatherings. Double or Triple the recipe and serve at Homecomings! Read more !
Ingredients:
2 lb carrots
1 scant c. sugar
1/2 c. oil
1/2 c. vinegar
1 can tomato soup
1 small onion
1 small bell pepper
1 tsp worchestershire
1 tsp. salt
1 tsp. mustard, dry
1 tsp pepper
Directions:
1. Slice carrots thin, boil until just tender, drain. Dice onion and bell pepper. Mix other ingredients in a bowl and then add the carrotts, bell pepper, and onions. Let stand several hours. Overnight if possible!
