This is a nice, refreshing salad with a light dressing. It is best made several hours or longer before serving. Great for a light summer lunch. I like to use the smaller size shrimp. Ingredients:
1 lb shrimp, peeled, deveined and cooked |
1 cucumber, seeded and diced |
1 cup sliced radish |
1 cup frozen corn, thawed |
4 scallions, chopped |
1/4 cup white wine vinegar |
1/4 cup balsamic vinegar |
2 teaspoons lime juice (or lemon juice) |
1 tablespoon sugar |
2 teaspoons chopped cilantro |
1/4 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. In a large bowl, combine shrimp, cucumber, radishes, corn and scallions. 2. In a seperate small bowl, stir together vinegar, lime juice, sugar, cilantro, salt and pepper. Pour over salad mixture. Gently toss to coat. |
