Cool Mediterranean Cucumber Salad |

Ridiculously easy accompaniment to Mediterranean main courses or grilled meat dishes. Make in advance, and cover and refrigerate while preparing the main course, for an extra burst of refreshing coolness! You can also serve it on a bed of fresh baby spinach. Ingredients:
2 large cucumbers, peeled and diced |
1/2 c. chopped cilantro (lightly packed) |
1/2 c. chopped mint (lightly packed) |
juice of 1/2 lemon |
2 tbsp olive oil (approx) |
2 oz. crumbled feta cheese |
Directions:
1. Toss together cucumber, cilantro, and mint. 2. Squeeze lemon juice and drizzle olive oil on top, and toss. 3. Add crumbled feta and toss. 4. Optional: Cover and pop into the fridge for 15 minutes or so, to cool and let flavors soak in. 5. Seriously, that's it. You're done! |
