2 cups honeydew melon, cubed |
1 cup cucumber, finely chopped |
zucchini, finely chopped |
1/4 cup thinly sliced green onion |
2 cups cooked chicken, shredded rotisserie chicken |
1/3 cup lime juice |
2 tablespoons canola oil |
2 tablespoons water |
2 tablespoons snipped fresh mint |
1 tablespoon sugar |
1/8 teaspoon black pepper |
6 whole-grain pita bread rounds |
Directions:
1. In a large bowl, todd together the hineydew, cucumber, zucchini, green onions, and chicken. 2. For dressing, in a screw top jar, combine lime juice, oil, water, mint, sugar, and pepper. Cover and shake well. Drizzle dressing lightly over the melon mixture. Toss to coat. 3. Divide mixture among 6 pitas. |
