Cool Chicken Couscous Salad |

A light summer dish with lots of veggies and flavor. (Does not include dressing in nutrition info of recipe.) Ingredients:
10 oz couscous |
1 cup cherry tomatoes, halved |
15 oz chickpeas, drained & rinsed |
6 oz marinated artichokes, reserve liquid |
1 large cucumber, diced |
2 roasted chicken breasts, (from store bought rotisserie chicken) diced |
1/2 cup mint, roughly chopped |
Directions:
1. Cook couscous according to instructions. Transfer to large bowl, fluff, and set in fridge to cool. 2. Cup up veggies and chicken. 3. Once couscous has cooled, add other ingredients and toss. 4. To dress, whisk reserved artichoke liquid, 1/2 cup olive oil, juice of 1 lemon, salt and pepper. (Nutrition facts for dressing not included in recipe.) |
