Cool and Creamy Spinach Dip |

I must confess that I used 4% cottage cheese, regular sour cream, and regular dressing. This is very creamy and quick to whip together. Ingredients:
1 cup 2% fat cottage cheese |
10 ounces frozen spinach (chopped, thawed, and squeezed dry) |
8 ounces nonfat sour cream |
2 tablespoons nonfat milk |
1 tablespoon parmesan cheese (grated) or 1 tablespoon romano cheese (grated) or 1 tablespoon parmesan cheese (grated) |
1 tablespoon light ranch salad dressing |
1/4 teaspoon dill weed |
1/8 teaspoon garlic powder |
assorted fresh vegetable |
Directions:
1. In a food processor, cover and process cottage cheese until smooth. 2. Transfer to a small bowl and stir in spinach, sour cream, milk, Parmesan-Romano cheese, ranch dressing, dill, and garlic powder. 3. Cover and refrigerate for 3 to 4 hours. 4. Serve with assorted vegetables. |
