Creamy and cool macaroni salad. Refreshing! From Entertaining magazine. Ingredients:

1lb elbow macaroni |
1/2 small red onion,minced |
1 celery rib,minced |
1/2c minced fresh parsley leaves |
2 tbs. juice from 1 lemon |
1tbs dijon mustard |
1/8tsp garlic powder |
pinch of cayenne |
11/2c mayonnaise |
ground black pepper |
Directions:
1. Bring 4qts. water to boil in large pot. Add 1Tbs salt and macaroni and cook till just nearly tender,about 5 mins. Drain and rinse with cold water till cool,then drain briefly so macaroni remains moist. Transfer to large bowl. 2. Stir in onion,celery,parsley,lemon juice,mustard,garlic powder,and cayenne and let sit until flavors are absorbed,about 2 mins. Addd mayonnaise and let sit until salad texture is no longer watery,5 to 10 mins. Season with salt and pepper to taste. 3. Can be made up to 2 days ahead. Stir in a little warm water to loosen texture,if necessary. |
