Cookies of a Tropical Persuasion |

I created this recipe one day when I was feeling adventurous. If you like a cookie that's not super-sweet but JUST RIGHT, this is it. Has a cake-like consistency. Ingredients:
1/2 c butter, softened |
3/4 c white sugar |
1 1/2 c flour |
1/2 tsp baking soda |
1/2 tsp salt |
1 large egg |
1 tsp vanilla extract |
1 tsp rum extract |
2 tsp lemon peel |
1/2 c sweetened coconut flakes |
1 c pineapple tidbits in juice , 1/3 of liquid in can set aside |
Directions:
1. Preheat oven to 375F. 2. In a medium-sized bowl, cream together butter and sugar. Stir in egg, vanilla, rum, lemon peel, pineapple w/reserved liquid and coconut. In a separate bowl, sift together flour, baking soda, and salt. Gently fold into wet mixture. Drop by heaping teaspoonfuls onto an ungreased cookie sheet about 2 inches apart. 3. Bake 9 minutes or until bottoms turn light golden brown; tops should still be light. Transfer to wire cooling racks until completely cool. Store in an airtight container to keep the cookies soft and moist. |
