Great cupcake recipe for cookies n' cream lovers! Hope you enjoy! Ingredients:
-2 1/4 cups all purpose flour |
-1 tablespoon baking powder |
-1/2 teaspoon salt |
-1 and 2/3 cups sugar |
-1/2 cup (1 stick) butter, softened |
-2 teaspoons vanilla extract |
-3 egg whites |
-1 cup crushed oreos (about 10) plus additional for sprinkling on top |
-1 16 ounce container vanilla frosting |
Directions:
1. -preheat oven to 350F. line 2 12 muffin/cupcake trays with 24 cupcake liners 2. -sift dry ingredients into large bowl. stir in sugar. add milk, butter and vanilla; beat with electric mixer on low speed or use wire wisk until smooth. add egg whites, beat 2 minutes, stir in crushed oreos. 3. -spoom batter into cupcake liners and bake for 20-25 minutes or until toothpick comes out clean. cool in pans on wire racks. 4. -frost cupcakes and sprinkle on additional crushed oreos. |
